Thinking about ordering one and I know that xpadder helps breaks the need for a mouse, but I would love to have the Nunchuck be Xpadder compatible. Any reason why it wouldn't be compatible?

If Windows recognizes it as a game controller and not a mouse then you should be good to go.

Well It's a No go 
Doesn't register as a gamepad. The USB Dongle uses some kind of custom firmware that you reflash to change the different game profiles. Seems to be a solid build, but definetely not ready for the mass market. One flash away from a bricked device. I just enjoy the nun-chuck.
